Here is my favorite cupcake recipe. They come out really light and fluffy. One box of white cake mix, one can of Sprite. Mix well.

For some reason, I couldn't find my flat frosting tip...mental note to buy one before next year...it really makes a difference in the way they look. I'm sure they'll taste just fine, though! You can also use skittles as the eyes if you want.

Rolled up Lasagne!
I didn't know the actual recipe so I winged it. I took leftover pasta sauce out of the freezer, defrosted it and added some ground beef. (Grass fed, of course.)
I par-boiled the noodles so they were soft enough to roll without tearing. I cooked them a few at a time in a big shallow frying pan.
Lay out the noodles and put down some ricotta cheese. Add the meat sauce and some shredded mozzarella.
BEWARE!!! Your hands will get dirty. I recommend wearing an apron or an old tshirt. Seriously, I do.
Now roll those bad boys up!
Spray your dish with cooking spray, it makes clean up so much easier. Then add a layer of sauce that the rolls can soak in. Line them up in the pan and top with more sauce and cheese like this:
Since everything is already cooked, just cover with tin foil. You can cook it now or later. I usually do 350 for 20 mins or so just to get 'em warmed up. You can also freeze and eat them another time. This is a great dish to take to someone who's sick or just had a baby.
If you're using a good sauce, you really can't go wrong.
